Usher in the Year of the Goat with Eight Rhapsodies of Spring at Peony Jade

We were treated to a lovely early CNY dinner at Peony Jade (Keppel Club) last week, and the Bonsai-shaped money tree yusheng was my personal favourite.

It was decadently lavished with lobster, Alaskan crab claws, tuna belly, Atlantic salmon, sweet shrimp, and urchin.

I truly could not tire of this dish. The homemade sweet sauce had a lovely citrusy taste, and the seafood was heavenly fresh! There was even a slight hint of truffle oil, which made the overall taste interesting and memorable. I would have munched on this throughout the tasting if not for the General Manager’s reminder to save some stomach space for the rest of the 7 dishes.

Hand-crafted goat-shaped deep-fried hum-soi-kuok

(Glutinous rice stuffed with minced pork and mushroom)

Almost too cute to be eaten (ahem, almost), each goat is filled with glutinous rice, finely diced savoury pork and shitake mushrooms. Crispy on the outside, chewy on the inside. Priced at S$9.88 per order of 3 pieces, this platter is for dine-in only. 1-day advance order is required.

The glutinous rice goats were accompanied by steamed black-eyed pea cake with golden pumpkin, which had a pleasant mix of salty and sweet flavours.

Australian Premium Whole Abalone Poon Choi

Featuring 18 premium ingredients including 10- head Australian abalones, whole Sakura Chicken, whole pork knuckle, golden oysters, roast pork, South African spikes sea cucumber, fresh whole scallops (鲜帶子), fatt choy and king prawns, one bowl of this is almost like an entire balanced meal in itself. Protein and nutrition packed. Yummy too.

Roast USA goose sealed with chef’s special “fa cai” broth

This grain-fed roasted goose dish is air-flown from USA and infused with Peony Jade’s specialty “fa-cai” broth made with Chinese herbs like Angelica root and spices. The meat was juicy and full of flavour. We hardly eat goose around here, so the taste reminded me a bit like duck.

Priced at S$188.88, this serves up to 12 guests. 1-day advance order is required.

Slow-fire stewed lamb with bamboo shoots and chestnuts

Lamb, in all its nutritious glory, is often savoured to warm the body in traditional Chinese medicine. At Peony Jade, the grass-fed lamb cutlets are blanched in hot water, then wok-braised with star anise, garlic and onions, sliced fresh ginger, fresh bamboo shoots, whole shiitake mushrooms and beancurd skin for 1.5 hours.

I enjoy lamb in general and this one had a soft velvety texture. I didn’t find the lamb taste too strong, but if you are not a lamb-lover, you may want to stay away.

S$78.88 for a box of 8 pieces of preservative-free artisan floral dazzlers filled with low-sugar white lotus paste with salted egg yolk and macadamia nuts.

This was a lovely treat to round up the magnificent feast. Although I was already pretty full, this one kept me going to the last bite.
